This recipe is off a can of Heinz "Vegetarian Beans in Tomato
Sauce" can:
1 small zucchini, sliced (about 1C)
1/2 C sliced fresh mushrooms
1/2 C sliced green onions
1/2 t Italian seasoning
1 16oz can Heinz Vegetarian Beans in Tomato Sauce
2 T grated Parmesan cheese
1 12 in. pre-baked pizza shell
1C shredded mozzarella cheese
1/2 C finely shredded Cheddar cheese
Spray large skillet with cooking spray; saute zucchini and next 3
ingredients until vegetables are tender-crisp. Stir in beans and
Parmesan cheese. Simmer 5 minutes; stirring occasionally. Spray
cookie sheet with cooking spray; place pizza shell on cookie sheet.
Spoon vegetable mixture evenly over pizza shell; sprinkle mozzarella
cheese on top. Bake in preheated 425F oven, 10 to 12 minutes, or until
shell is lightly browned. Remove from oven and sprinkle with Cheddar
cheese; cut into 8 wedges. Makes 4 servings (2 wedges per serving).
Here is my rendition:
Saute (or steam) a bunch of vegetables. I used carrots,
broccoli, onions and garlic).
Meanwhile make a pizza crust. My first try was using a Bisquick rolled
biscuit recipe. My second time I used a pizza dough recipe from
"Pizza" by James McNair. WARNING: a pizza dough from scratch takes a
while to make and should not been done while steaming the vegetables!
Pour a can of Heinz Vegetarian Beans in Tomato Sauce, the steamed
vegetables and sliced tomatoes on to the dough. Note: the Heinz beans
are merely navy beans on tomato sauce.
Season with Italian seasoning. I used basil and oregano. You
might want to put this in the vegetable mixture while steaming.
Cover with your favorite cheeses! I used mozzarella and Parmesan.
Place in a 500F oven. Bake until done (everything is already cooked
except for the dough, so when it turns brown you're done).
Final note: Having beans on a pizza sounds strange, but it is
actually quite good and filling.
